Treatment menu engineering implies a responsibility and requires managers to possess a sound knowledge of the spa\u2019s costs and sales. It is therefore essential to know the direct cost of all items offered in order to properly set an adequate sales price. Finally, and in order to be able to make comparisons, it is necessary to have sales data of each of the treatments on the menu and to compare treatments in the same competitive category.<\/p>\n<p style=\"text-align: justify;\">&nbsp;<\/p>\n<p style=\"text-align: left;\"><strong>Factors contributing to success<\/strong><\/p>\n<p style=\"text-align: left;\">Successful engineering of a treatment menu is based on three factors: contribution margin, customer demand and a good combination of the treatments and services that are offered. The contribution margin is the mathematical difference between the selling price of a treatment and its direct cost. The higher the contribution margin of a treatment or service, the more important it is to sell that treatment or service. The contribution margin gives us a clear idea about the role that each treatment plays on our bottom line.<\/p>\n<p style=\"text-align: left;\">In order to develop a competitive treatment menu, it is convenient to create a list of all the treatments according to type of treatment. It is also advisable to know the exact number of the treatments that are sold during a specific period of time, which can vary according to different criteria set by the spa and usually ranges from one to three months. Furthermore, it is essential to know the total direct cost of each individual treatment. Finally, in order to analyse sales, it is important to have a price list of each of the items included in the treatment menu.<\/p>\n<p style=\"text-align: justify;\">&nbsp;<\/p>\n<p style=\"text-align: left;\"><strong>The 4 sections of a treatment menu<\/strong><\/p>\n<p style=\"text-align: left;\"><strong> <\/strong>Treatment menu engineering requires the menu to be split into four different sections in order to ascertain which treatments are selling and what effect they have on the bottom line. These four sections are known as <em><strong>stars<\/strong><\/em>, <em><strong>plow horses<\/strong><\/em>, <em><strong>puzzles<\/strong><\/em> and <em><strong>dogs<\/strong><\/em>. Under <em><strong>\u2018plow horses\u2019<\/strong><\/em> are those treatments that have a <strong>high cost of sale<\/strong> but also a<strong> high sales turnover<\/strong>. <em><strong>Puzzles<\/strong><\/em> include our <strong>low cost<\/strong> and <strong>poor selling<\/strong> treatments, and finally, under the <em><strong>\u2018dogs\u2019<\/strong><\/em> section we have our <strong>high cost of sale<\/strong> treatments that <strong>sell poorly<\/strong>.<\/p>\n<p style=\"text-align: left;\">Knowing the target market for each one of our treatments as well as the kinds of treatments to include in the menu is the key of a well-developed treatment menu. When judging the importance of a well-elaborated menu, it is also relevant to keep in mind its close relationship with a coherent pricing strategy and a successful yield management system.<\/p>\n<p style=\"text-align: left;\">As can be seen, developing a successful treatment menu is not matter of chance, nor is it a simple list of treatments and services. A well-written menu contributes significantly to the bottom line of a spa. El margen de contribuci\u00f3n es la diferencia matem\u00e1tica entre el precio de venta de un tratamiento y su coste directo. Cuanto m\u00e1s alto el margen de contribuci\u00f3n de un elemento de la carta, m\u00e1s importante es venderlo. El margen de contribuci\u00f3n nos da una idea clara sobre la importancia de cada uno de los tratamientos con respecto al ingreso general.<\/p>\n<p style=\"text-align: left;\">Para poder hacer una carta competitiva es conveniente crear una lista de tratamientos seg\u00fan los distintos tipos de tratamientos y conocer el n\u00famero exacto de los tratamientos vendidos durante un periodo concreto, el cual puede variar seg\u00fan criterios del spa y oscila normalmente entre uno y tres meses. Tambi\u00e9n es imprescindible conocer el total de coste directo de cada uno de los tratamientos. Dichas secciones se conocen como: estrellas <em>(stars)<\/em>, caballos de arado <em>(plow horses)<\/em>, puzles <em>(puzzles)<\/em> y perros <em>(dogs)<\/em>.<\/p>\n<p style=\"text-align: left;\">En la secci\u00f3n de <strong>estrellas<\/strong> encontramos los tratamientos con <strong>costes bajos y \u00a0venta alta<\/strong>. Los de <strong>caballos de arado<\/strong> tienen <strong>un coste alto y una venta alta<\/strong>. Los de <strong>puzles<\/strong> tienen <strong>un coste bajo y una venta baja<\/strong> y los de <strong>perros<\/strong> unos <strong>costes altos y una venta baja. <\/strong>Conocer el p\u00fablico que consumir\u00e1 cada uno de los tratamientos y saber cu\u00e1les incluir en las secciones del men\u00fa es la base de una carta bien redactada. Tambi\u00e9n hay que tener en cuenta a la hora de juzgar la importancia de una carta bien hecha su estrecha relaci\u00f3n con una estrategia de precios y una gesti\u00f3n de rendimiento exitosa.<\/p>\n<p style=\"text-align: left;\">Como podemos ver, crear una carta de tratamientos que funciona bien no es una cuesti\u00f3n de suerte, ni es una simple lista de elementos.
